Christmas Coffee: Special Recipes for the Holidays

Preparation

Beat the yolks with the sugar until you obtain a light, fluffy cream, which takes about five minutes with a mixer. Add the mascarpone and mix gently until fully incorporated. In another bowl, beat the egg whites with the pinch of salt until they form stiff peaks. Fold the whites into the mascarpone cream with gentle bottom-to-top movements, preserving the air.

Briefly dip each savoiardi biscuit into the cold espresso. The key here is speed: the biscuit should absorb the coffee without falling apart. Line the bottom of a rectangular dish with a layer of soaked biscuits. Cover with half of the mascarpone cream. Repeat with another layer of biscuits and finish with the remaining cream. Cover with plastic wrap and refrigerate for at least six hours, ideally overnight. Before serving, dust generously with cocoa powder.

Irish Coffee: The Classic and the Non-Alcoholic Version

Irish coffee was born in 1940s Ireland, created by a bartender to warm flying boat passengers on a cold winter night. The combination of hot coffee, whiskey, sugar, and cream became a worldwide classic. For the holiday season, we offer the original recipe and an equally delicious non-alcoholic version.

Classic Version

  • 180 milliliters of strong, hot coffee brewed by pour-over or French press
  • 45 milliliters of Irish whiskey
  • 1 tablespoon of brown sugar
  • Fresh lightly whipped cream (not stiff whipped cream)

Warm a glass goblet with hot water and discard the water. Add the sugar and hot coffee, stirring until fully dissolved. Add the whiskey and stir. Carefully pour the cream over the back of a spoon so it floats on top of the coffee. Do not stir after adding the cream. The idea is to drink the hot coffee through the cold cream layer.

Non-Alcoholic Version

  • 180 milliliters of strong, hot coffee
  • 30 milliliters of homemade caramel syrup
  • 1 teaspoon of vanilla extract
  • Fresh lightly whipped cream
  • A pinch of freshly grated nutmeg

The preparation follows the same logic: dissolve the caramel syrup and vanilla in the hot coffee, pour into the warmed goblet, and finish with the floating cream and nutmeg. The result is a cozy, aromatic beverage perfect for family gatherings.
